These are the values that give life to our artisanal bakery, or biscottificio, is a family business that was founded in 1995 in San Lorenzello, a small village of the Sannio. The rolling hills and lush green grass of the Sannio gave birth to our name: “Monte Erbano”, a land in which we are situated. For centuries the landscape has provided quality firewood and timbers to the settlers of the region. It is this superior firewood that we use today in our ovens, in which we bake our products. It’s without doubt, that by employing modern, cutting-edge machinery, it has allowed us to shorten the preparation and processing time and allows us to ensure a clean work environment in which we work. Our skilled bakers use traditional methods of working the natural ingredients and placing the taralli in commercial, wood burning ovens of our biscottificio. The artisan bakers use centuries old techniques of forming woven taralli, made famous in the San Lorenzello region, while maintaining the genuine and traditional fragrances, and flavors passed on through the centuries.
